Pepparkakor, or Swedish gingerbread cookies, are a delightful holiday treat. Here's a basic recipe for making traditional Swedish Pepparkakor:
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
Instructions:
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, cardamom, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the molasses, egg, and vanilla extract to the butter and sugar mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough is too sticky, you can add a little more flour.
- Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out one disk of dough on a lightly floured surface to about 1/8 inch thickness.
- Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets, leaving a little space between each cookie.
- Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Repeat the process with the second disk of dough.
- Once the cookies are completely cooled, you can decorate them with icing or enjoy them as is.
